The history of soybean oil (SBO) production is presented and compared to that of the major edible vegetable fats and oils. Soybean oil composition is compared to other oils and normal and alternate compositions are shown and considered. The relative value of the soybean meal and soybean oil components are shown and described in relation to the total market. The
normal and expected variability of the composition of crude soybean oil is related to methods of extraction, soybean quality and other factors. The critical considerations in the processes of extraction, degumming, refining (chemical and physical), hydrogenation and deodorization are shown and discussed. The current consumer acceptability of refined, bleached and
deodorized soybean oil is discussed, concluding with a consideration for the future production of soybean oil.
